Hickory is probably the most popular smoke wood used in barbecueing. It has a sweet to strong, heavy bacon flavour that complements almost any meat. It can be used with Oak to weaken the flavour if it is too strong and it works great with pork, ribs, ham, poultry and beef. A great all-rounder.
